[rocprofiler-systems] CMake Cleanup (#2455)
## Technical Details
- Removed `configure_file()` call that was generating `defines.hpp` from `defines.hpp.in` and update CMake file to reference renamed file.
- Remove duplicate `find_library(pthread_LIBRARY NAMES pthread pthreads)`
